Pretty sure I have celiac, but I had no idea you have to eat gluten for so long before being tested for it to show. My gastro said nothing of it

Hello everyone. I’ve been lurking about this thread for a while. I got diagnosed with hashimotos in January and now waiting on an endoscopy to rule out celiac. I had negative blood tests twice. It takes roughly 15-24 hours for my symptoms to start after I eat bread, pizza, wraps etc.
