Typically preserving foods >4.6 pH, we pressure can at 250F. Does a combi-steam oven which can be programmed to 250F at 100% humidity mimic the environment needed to safely pasteurize the food? Or is it the pressure, and not the temperature that determines that you can safely create preserves?
