I know nothing and need good recs. Looking for my first high end purchase. Budget 400-700 usd for a 8-10in damascus chef because I'm basic. I'd much prefer a nice western handle and am willing to go custom. Also, its an impossibility I know, but an S-Grind would be cool. Definitely not essential tho
