dry brine and reverse sear in a cast iron skillet. working on the crust and the cooked inside area. guess i need to get the skillet hotter.

First post! My husband cooked this Steak Roquefort (HT claimed filet mignon, looks like strip to me??) perfectly medium (IMO). My iron levels have been low and we're about to get walloped by Hurricane Debby. It was delicious! Beautiful picture? No. Delicious steak? HELL YES.
