When I pour a bunch of chocolate chips in some dense fluid (like custard, dough, batter...), what makes it so they're more or less evenly distributed, instead of clumping all together after I mix it for a while?

I've heard that to make pizza, the hotter the oven, the better it will turn out, but it will also take less time to cook. Is there a way/formula to calculate how long an average pizza will need to cook given an arbitrary temperature? What if i put it in a oven at 1000c? Or a nuclear reactor?
