When feudal lords were gearing up for war, what was it like between arming the levies and an actual declaration of war? Wouldn't you get an advantage by prepping the levies, declare war, then be on their doorstep the next "day?" If so why did it take so long for professional soldiers to become comon

How is judaism so pervasive despite history of persecution and no constant lands like orthodoxy or catholicism had around 900AD? Furthermore, having jerusalem populated with syrians/muslims. How did jewish culture stick around and not forcibly converted like the rest of europe or the world?
