I was watching unedited footage from Tom Scott sending garlic bread on a weather balloon and noticed on the way up the temperature would be as low as -35 C... but at the highest point it was about 2 C. Why didn't it keep getting colder the closer to space?

I noticed that a roach on its back starts off with legs extended and moving them around... but as days pass it starts curling the legs inward more and more in the typical "dead bug" pose. But even when in this pose if you flip it over it will run again. What is making the legs contract over days?
