Was Rumelia and the European theatre of Ottoman ambitions really that important to them and the Asian theatre not so much? Or is this simply bias as people generally look towards Eurocentric history?

The Seljuks, Rum and Ottoman Empire had large numbers of Greek and Christian populations in their Empire. Why didn't they revolt against their rulers? Especially knowing that they pushed back and, with the Ottomans, ended the Byzantine Empire, a Greek and Christian power.
