How are we sure we don't have a subjective understanding of what "order" is when we say the second law of thermodynamics ensures that order is always decreasing in a system?

Infant formula says "warming above 38 degrees C will compromise the B. Lactis" but every scientific article I find says B. Lactis survives well up to even 45 or 55 degrees. Are the instructions just being conservative, or can it be "comprised" in other ways?
