The nobles and gentry of the UK knocked down their castles to build country houses and then knocked down their country houses to avoid inheritance taxes. Did other European countries have a similar trajectory?

Since the Islamic calendar is completely lunar and doesn't sync with the solar seasons, did medieval Islamic empires use it for taxes? Because, and I'm presuming here, most taxes were probably paid in grain or livestock which you'd want to assess or take a consistent point in the solar year?

Outside of plague doctors stuffing their beaks with herbs, were perfumes believed to have prophylactic ability? That is, in Antiquity, the Middle Ages or the Early Modern period, did people applying perfumes to themselves believe that they were warding against disease?
