Went Back to the Dark Side A Cold Dutch Oven and lower temp. Took lid off at 45 minutes and went another 28-30 minutes till internal temp of 210F.

Prepared two bigas to make ciabattas and realised I need to make them tomorrow instead will they still be good the next day. I think I made them at 1pm on the 2nd and now it's 1:53pm will another day hurt it?
