Does temperature have momentum? For example, if I have two cubes of steel, both heated to 500°F but one was held at that temp for 5 hours and the other for only 2 minutes, could you tell the difference as they cooled in the air?

It seems almost all of my prepackaged meals recommend being cooked at 425°F. The rare reception seems to be 350°F. What, if anything, is so special about these temperatures?
