What does the body know you're taking food and not breathing air ?

How does the body know that the solid stuff you swallowed is 'food' and shouldn't go through to the lungs but to the stomach ? Did this system evolve to perfection overtime, meaning that 'people' used to die due to this when the transition to humans was beginning ?
