In the LHC, two protons are smashed into one another to release fundamental particles. Why do they not smash two electrons or two neutrons or a proton and a neutron in hopes of finding different results or different particles?

Silly Question time-- Could cosmological structures like the Huge-LQG or the one discovered around z 1.3 (could not find a name) be evidence of some sort of cosmological granular convection. Some vibration of energy that is separating "larger" structures from "smaller"?
