How did organisms find themselves with different numbers of chromosomes from species to species? Humans have 46 while fruit flies have 8.

Being that many of our behaviors and instincts mirror those of our primate cousins, why do we not find bugs or other wild critters to look tasty? Instead, we grimace at the sight of bugs instead of salivating.
