How do chemists discover which specific catalyst to use for what reaction (e.g. finely divided iron for the Haber Process, vanadium oxide for the Contact Process); is it pure trial and error or something better?

With techniques like mass spectrometry, ultraviolet or carbon-13 NMR spectroscopy, can't we reverse-engineer secret formulae or recipes like Coca-Cola or KFC's 11 herbs and species? How are these still kept secret?
