Pies, Tarts, and pans - Based on watching British Bake-Off as an American, it appears that UK bakers use upright crusts in scalloped pans for their pies and tarts. American bakers generally use sloped-sided pans and dishes with smooth sides. What is the history of this divergence?

A great number of games and sports (soccer to snooker, baseball to badminton and many more that I've found) that are popular today were invented during the time period 1860-1890. Prior to June 19, 1865, slaveowners are said to have moved to Texas to keep their 'property' longer. What was the logic there? Did they think that emancipating Texas would somehow be forgotten in the shuffle of the post-war?
