How can astronomers tell a planet's mass and distance from its star by the gravitational effect? Couldn't the same effect be produced by a different organisation of the planetary system?

If you were able to experience life at 200 times the speed of everyone else and you fell off a building it would seem that you were floating gently to earth. Would the impact still kill you?
