If electrons are not made up of quarks, why do they form neutrons when pushed into protons in a neutron star? Where do the extra down quarks come from?

Destructive interference of 2 waves forms a dark fringe which essentially is a region of absence of light. How can 2 light waves, i.e, 2 energy carrying waves, interact with each other and produce a zero energy resultant? Doesn't that violate the Law of conservation of Energy?
