How many generations does it appear to take for environmental factors to begin to effect physical traits of humans (I.E melanin concentration)?

I hadn't gone for a run for a week, and then yesterday I ran a 10K. My tracker noted my resting heart rate increased 5 BPM over last night, and heart rate variance was much lower than usual (32ms). Why is this? Don't these usually indicate low cardio fitness?
