Since mechanical locks weren't perfected until the 1800's, how did people before then protect their homes and nice things?

Why has French influence "stuck" in New Orleans? Besides the names, you would never know St Louis or Detroit were French, and there is no original Spanish culture in most of America's Spanish-named cities.
