Is the stomach basically a constant ‘vat of acid’ that the food we eat just plops into and starts breaking down or do the stomach walls simply secrete the acids rapidly when needed?

If there’s no known way to permanently reduce the number of fat cells you have after adolescence, why isn’t there a massive push to cut sugary and fatty foods from children’s diets?
