What were the typical cooking spices found in an American household in the late 1700s? Would there have been much difference in the 1800s?

Is there historical evidence as to when companies/merchants started branding/naming their companies or businesses? As an example, instead of a sign simply saying 'Fishmonger' or 'Money Lender,' when might someone have put 'Cassius the Fishmonger' etc.?
