Does a certain sound penetrate increasingly through a certain medium as it increases in volume, or does a certain sound need to be a certain volume to penetrate a certain medium *at all*?

Why doesn't something like an apple rot while it is still attached to the tree, but as soon as it is removed from the tree it becomes susceptible to rotting? What biological mechanism is at work here?
