How does aphasia (the word salad effect after a stroke) affect a person's ability to understand and communicate in ways other than speaking? Do people who've recovered understand what was going on? Can they write or use sign language even when they can't talk?

In movies, people who have very little access to water when lost often conserve from their supply, taking only small sips at a time. Is this actually more effective then just drinking an entire canteen if you're thirsty, or do you somehow "waste" water by consuming more at one time?
