How can we be sure the elements in stars that we see with spectroscopy aren't actually heavier than any elements we have made and just happen to share the spectral waves with the light elements?

If you were to compress an amount of fart gas into a solid, and it was big enough to be seen with the naked eye as a solid, would it look like a turd or something else?
