People say that if you planted an (unrealistically) huge telescope 65 million light-years away that you would be able to look back on the Earth and see dinosaurs. But would the light that was reflected off their skin 65 million years ago still be "in tact" that far into space where the telescope is?

In regards to diagrams/videos that attempt to visualize gravity. If spacetime operates in 4-dimensions, why is it always depicted as a 2-dimensional sheet? Shouldn't it be depicted as an ever-expanding jell-o type grid?
