Given that the majority of original Italian immigrants to America came from the South, how come most of the popular Italian dishes in America (Lasagne, Bolognese, Baloney, Alfredo/creamier sauce, Pollo/Vitello/Melanzane Parmigiana, Tiramisu) are far more Northern in origin?

The frequency with which major label bands typically released albums has moved from consistently around one per year in the 60s, slowing down progressively to one every 2 or 3 years recently. What are the factors that caused this slowdown in releases seemingly uniformly across the years?
