Why do we (and many other animals) have two of a lot of organs - two lungs, two kidneys, two testicles/ovaries, when in theory one large organ could do the job?

I’ve read that compasses don’t work on Mars because of the lack of a ferrous core to generate the appropriate magnetic field - but why have I also read there’s actually many different fields rather than just the single handy one?

Are random generic mutations that occur ‘naturally’ (ie not from disease or artificial radiation exposure etc) ONLY caused by gamma rays affecting DNA? Have I got that part wrong too?
