I use a pressure cooker to heat and disinfect large quantities of water for tea. When it stops boiling, I add sugar and it boils like CRAZY.

I heat large amounts of water in a pressure cooker, and after it stops boiling, I’ll then add sugar and it boils like CRAZY - what’s happening here? Shouldn’t the introduction of a cooler substance reduce the temp?
