Why don't we have interplanetary probes that assemble parts or equipment, as necessary, after it has arrived with an on-board 3D printer? Are we missing some technology, or is there just no current advantage to doing so?

If fusion stopped in the sun, we could know within 8 minutes because of neutrino emission. How many years or tens of thousands of years would it take before the sun dimmed enough to have a noticeable effect on our ecosystem? (e.g., plants not photosynthesizing enough)
