Why are so many flags of nations simply bicolor or tricolor? Many are seemingly boring compared to older flags.

I noticed many Turks are fair skinned while many Greeks are dark skinned, sometimes they can be confused for each other. Are many of these people ethnic Greeks and vice versa? How common was forced conversions to Orthodox Christianity in the end days of the Roman empire and afterwards?
