How common was PTSD during the crusades? Did it shape the interpretation of hell?

As we know today a lot of poisons need some time to take effect. How useful were food tasters employed to prevent poisoning for their kings / rulers really? Was the profession a placebo?

When fund-raising Unicef & co classically display "the African" as poor, malnourished and unable to care for himself. In many rural regions (of Europe) those billboards are the only time natives ever have seen POC. To what extend have those 20th century campaigns shaped modern racism?
