Why do some animals evolve to mimic the look of other toxic animals instead of evolving to develop their own form of dangerous toxins?

Why did humans evolve to primarily communicate using sound as opposed to sign language? Sign languages are quiet and wouldn’t require the extra energy needed to develop specialized muscles/tendons/bones necessary for complex speech.

I’m not very smart, but I love reading about astrophysics and astrobiology. That being said, we learn about far away planets because they move around/distort their host star. If we wanted intelligent Aliens to know we exist wouldn’t we want to create a distinct silhouette/distortion around our Sun?
