Food question: Did the aristocracy of Ireland and the like know they were eating testicles and palates? A cooking show on Netflix is using historical recipes and I am curious whether upstairs knew what downstairs was putting in the fancy dishes?

In modern history, we studied nationalist movements and propaganda. Specifically the appeal of accepting fascist government/dictator styles? Could anyone teach me something more from ancient history in the rise and fall of this type of authoritarian state? Thanks.
