What would be considered trash in medieval times?

In the Polyptique of Marseilles, it shows how much the coloni must pay in pasturage, tax, and tribute, but these are not defined in the polyptique. What is the difference between them, and why did some coloni pay one or the other, or all of them?

A common trope in medieval-based media are the free-roaming chickens, among other animals, that run around villages and towns, whether or not said towns are enclosed in any way. Was this actually the case?
